Ep 22: Preben Olsen & Michael Payne of Aardwolf Brewing Company

This episode, I am joined by Aardwolf Brewing Company owner Preben Olsen and head brewer Michael Payne. Aardwolf Brewing has been a mainstay in the Jacksonville, Florida beer scene since 2013 when they opened as a beer bar and progressed to brewing their own beer. Preben and Michael discuss Aardwolf’s origins and how they came to start brewing in an historic ice factory in the San Marco area of the city.

Preben is also on the executive board of the Florida Brewers Guild, so I could not resist asking him about some of the initiatives that the guild has going on during the current legislative session.

As a side note, the brewery is built very close to the train tracks, so there is periodic train noise. The brewery was also opening the tap room, so there is ambient brewery tap room noise throughout the interview.

This episode, I am joined by Corey Adams of Southern Swells Brewing. Southern Swells just celebrated 6 years in the Jacksonville, Florida beer scene. Through it all, their beer lineup has been anchored by New England IPAs, especially their Karate In The Garage made with cryo Mosaic hops. Aside from that one particular beer, Southern Swells lineup changes continually. During this visit, Southern Swells still had Where the Citra Things Are, a session IPA made with every form of Citra hops available to purchase.

Cory sat down and discussed the idea of keeping the Southern Swells lineup fresh, what six years has taught him, as well as what is coming for this Jacksonville Beach Brewery.

Cigar City Brewing founder Joey Redner joins us in this episode of the BeerWise Podcast.

Joey Redner built one of the most iconic breweries in Tampa's history, but that is not what he intended when writing Cigar City Brewing's initial business plan. Joey insists that he never intended for the brewery to grow as big as it did, and Joey shares what he has learned and some business thoughts on craft beer. Joey and Mark also talk about Joey's origin story in craft beer and the early days of Cigar City Brewing up to the day that Joey sold the brewery and a little bit on what he's been doing since the sale.

Ep 18: Ron Raike of Playalinda Brewing and Madison Roane of Florida Avenue Brewing

It was a fortunate coincidence that I had my recorder handy during August's Florida Brewers Guild Conference, as both men were in attendance and had some time to sit down and talk about their journeys as brewers and record some of the names of brewers who have come and gone from Florida breweries. Ron and Madison talk about what it was like sharing information between breweries before email and the internet and other differences between their start in brewing and their current state of affairs.

Ron Raike is the brewmaster at Playalinda Brewing Company and Madison Roane is the Vice President of Production at Florida Avenue Brewing Company. The two brewers have each been brewing beer professionally in the Sunshine State since the 1990s and have traveled worked with and worked for many other brewers and breweries in Florida History. Ron began his career brewing in the Orlando area, including a stint at what may have been the first airport brewery that brewed beer onsite at an airport - the Shipyard Brewpub in Orlando International Airport - and has transitioned between several breweries to his present position at Playalinda Brewing. Madison began brewing at McGuire's Brewpub in Destin and "followed a girl down to Tampa" and worked at Cigar City Brewing for years until transitioning to his current position at Florida Avenue Brewing in Wesley Chapel.

The initial interview was Ron's idea - except this was before COVID, and it took several years to get both of these guys in the same room. The interview is worth a listen if only for the banter about hard seltzer and milkshake IPAs.

Barriehaus is a lager-focused brewery in the heart of Tampa Bay, located one block off of 7th Avenue in Ybor City and 5 minutes away from some of Tampa's premiere breweries and meaderies. Barriehaus Beer Company has made a name for themselves by focusing their energies and their tap list almost exclusively on lagers.

In this interview, Jim and Brittney talk about the formation of the brewery and Jim's unique history with lager brewing as a fourth-generation brewer following in the steps of his family. Jim and Brittney are forthcoming about why they chose to open a brewery in Tampa, what continues to inspire them and what happens when their brewing dreams ran headlong into the COVID-19 pandemic.

Ep 16: Mike Harting of 3 Daughters Brewing

In this episode, I am joined by Mike Harting, co-owner and CEO of St. Petersburg, Florida's 3 Daughters Brewing.

3 Daughters Brewing opened as one of St. Petersburg's first craft breweries and after getting started and surviving the COVID pandemic, 3 Daughters has entered a growth phase that includes several satellite locations, like one in Fit2Run Running Store, one in popular tourist destination Clearwater Beach, and one in the St. Petersburg/ Clearwater Airport.

3 Daughters Brewing's Orange IPA is also now available on Allegiant Airlines flights leaving from Florida airports.

Mike talks about this growth, as well as his background in the restaurant industry, and drops a few hints on where 3 Daughters Brewing will be growing to in the future.

Florida Aquarium's Brews by the Bay is back – and it’s being turned up a notch!

For years, The Florida Aquarium has hosted a successful beer, food and music festival called Brews by the Bay. After a two-year hiatus, the Aquarium is bringing back the event with a twist – a musical twist, that is. In this episode, I am joined by John LoScalzo, owner and chef of LoKo Cuisine.

LoKo Cuisine is best known for their pop-up meals in collaboration with the Tampa Bay area's craft breweries, called "Eggs & Kegs." On scheduled Sunday mornings, John and his wife Stephanie Kojima are hard at work cooking inspired meals for the culinarily curious (and hungry) food and beer enthusiasts.

And LoKo's meals always have a food, beer, or cultural "twist." Whether it's a meal themed after the flavors of Cigar City's Jai Alai IPA, or New England IPA with New England Surf & Turf, or his latest inspiration Bibimbap & Hip Hop, John always finds a creative theme for his meals.

In our interview, John talks about how LoKo Cusine got started, his inspiration for LoKo's pop-up meals, and his thoughts on beer and food pairing.

Arkane Ale Works is celebrating six years on Saturday, July 9th and they have certainly made their mark on the Tampa Bay brewing community.

Arkane Ale Works is known for their Mango Habanero Berliner Weisse, their pie sours, their adjuncted barrel-aged stouts, and their eye for creativity and as Joe says, “some days we’re more of a sweet shop than a beer store.”

In our interview, Joe talks about his time in the beer industry making traditional beers as the head brewer of Rapp Brewing Company of Seminole, Florida, one of the breweries that helped bring gose back as a popular beer style. Joe talks about how he and business partner Dan Graston began Arkane Ale Works and what is happening with their current state of expansion and distribution and more.

Ep 13: Dave Doble of Tampa Bay Brewing Company

In this episode, I am joined by Dave Doble of Tampa Bay Brewing Company.

One of Tampa Bay’s iconic and well-visited breweries, Tampa Bay Brewing Company is celebrating 25 years in July 2022. Visited by both Michael Jackson and Guy Fieri, many visitors know TBBC for its welcoming pubs in both Ybor City and Westchase.

In the mid-1990s, the City of Tampa did not have many options for craft beer until John and Vicki Doble put their faith in their son Johnny’s vision of opening a homebrew store called the Brew Shack. Johnny and his family grew that store into a brewpub and one of Tampa’s first ‘destination’ breweries. Once the pub opened, Johnny was the head brewer and Dave Doble left the family business to train as a pilot. Dave talks about when his brother tragically died in a fire in 2003, how he decided return to the brewery his family had founded.

In our interview, Dave talks about that return and how he and his family decided to grow TBBC’s business to its current heights. Dave also talks about changing the TBBC beer lineup and how the brewery’s growth has been helped by Reef Donkey, a GABF Bronze-medal winning pale ale named for the Amberjack, a game fish which lives in Florida’s wrecks and reefs.
