12. Jacques Pepin: The Story Of One of the Most Beloved French Chefs In The World

Born in 1935 near Leon, France, Jacques Pepin has been surrounded by food his entire life. From his apprenticeship at the young age of 13, to working in Paris as a young adult, to immigrating to the states in 1959, Pepin knew from the beginning that his life would be centered around food even though chefs weren’t adored as they are today, and cooks typically lived a humble, modest life out of the spotlight. 
 
 
Today at age 87, Jacques has published over 30 cookbooks, been on over 13 series of 26 shows with PBS, wrote a column for the New York Times for nearly 10 years, taught at Boston University for over 70 years, and has won 24 James Beard Awards. In this episode, Jacques takes us on a journey of his childhood through later adult years, and shares stories about things like turning down a position as JFKs personal chef and what it was like hosting a television series and being lifelong friends with Julia Child, plus his thoughts on family and cooking, and why he believes the kitchen is the most sacred place in the home.

11. Ben Jacobsen, Jacobsen Salt Co.: From Hand-Bucketing Sea Water To Making The Best Finishing Salt In The World

Ben Jacobsen was living in Europe in 2003 when his girlfriend brought home good quality finishing salt and he was blown away by how much better it was than anything he had ever had in his life. After returning back to the states a few years later, Ben began experimenting with making salt on his own, sourcing sea water from the Washington and Oregon coast to see if he could replicate that salt he had enjoyed in the early 2000’s. 
 
After sampling 27 different locations for sea water, Ben finally landed on Netarts Bay in Oregon for water that produced the best salt in the world and opened his small business in 2011. Today, Jacobsen Salt Co. is recognized as one of the best salt makers in the world and their products are used by award-winning Chefs and celebrities, have been featured in multiple noteworthy publications, and are sold nationwide in both specialty shops and places like Williams Sonoma. 
 
In this episode Ben shares the story of building his business, some of the challenges he’s experienced over the years, why good salt is always worth the small investment for any home cook, and a few bonus recommendations for great restaurants in the Portland area.

9. Alan Reed, Reed’s Dairy: How This Small Town 1950’s Family Business Now Makes Some Of The Best Ice Cream & Chocolate Milk In The Country

Larry Reed and his two brothers LeRoy and Dave started Reed’s Dairy in 1955, selling fresh milk for roughly 50 cents per gallon and allowing customers to pay with an honor system using a shoebox above their dairy refrigerator in their original location in Idaho Falls. 
 
Although their farm-to-consumer roots still are in operation today with home delivery still in place as they had in the beginning, second-generation Alan Reed brought unmistakable innovation as a young opportunist to the family business in the late 70’s. Cheese, ice cream, and chocolate milk were all products added to the lineup of products at Reed’s Dairy, and to this day the ice cream at Reed’s is their most popular and beloved product. 
 
In this episode, Alan uncovers the full story of how Reed’s Dairy began and grew, the uncompromising history behind the making of their ice cream and iconic chocolate milk (complete with Idaho potato flakes), and what Alan Reed believes to be the key to long-lasting small business.

8. Frida Guerrero, La Casa Del Tamal: From $11 In Sales to Being Voted Utah’s Best Mexican Restaurant

Cristina Olvera was known for her delicious tamales over the years, but it wasn’t until 2019 that she decided to go all in on her aspiring catering company. To obtain the licensing and qualifications necessary to operate her small business, she took over a humble restaurant at a swap meet in West Valley City (Salt Lake City), Utah making classic Mexican dishes like tacos, tortas, and of course her tamales.
 
A few months later in early 2020, on a day when the total sales of the restaurant amounted to $11, daughter Frida Guerrero had the idea to bring excitement and buzz to the restaurant with the addition of trending birria tacos–completely new to the menu at La Casa Del Tamal and practically unknown to locals in Salt Lake City. Guerrero reassured her mother that her birria was the best she had ever tasted and that everyone who tried them would love them, but Cristina had her hesitations. 
 
Thanks to word of mouth, social media, and the irresistible menu items, La Casa Del Tamal quickly became one of Salt Lake City’s most beloved restaurants, with a long line of food enthusiasts each day waiting for their turn to try the coveted birria tacos. 
 
Today La Casa Del Tamal can be found at their new location on 5600 West in West Valley City and the Olvera family has more exciting plans on the way which we fully detail in this episode.

7. Erika Kwee, The Pancake Princess: Her Data-Driven Quest To Find The Best Recipe For Every Baked Good In Existence

In 2012, Erika started her blog The Pancake Princess as a casual way to share her favorite recipes, but things changed in 2016 when she began her quest to find the very best chocolate chip cookie recipe out there (spoiler alert: Cook’s Illustrated was the clear winner). Erika had no idea that this would be the beginning of dozens of bake offs (she’s currently at over 60 and counting) with anywhere from 9-12 recipes for each of her bake offs.
 
Join us as we chat on the show about how Erika selects recipes for each bake offs, what it’s like making a dozen of the same recipe, how she chooses tasters to score each bake off, and what life looks like since she’s moved from Houston to New York City.

4. Crystelle Pereira: From Beginner Baker to GBBO Finalist & Cookbook Author In 3 Years

Crystelle Pereira began cooking in her mother's kitchen at a very young age, but it wasn't until 2019, just before the lockdown of 2020, that Crystelle's family requested that she start baking. After dabbling in several cake recipes and decorating techniques at home, Pereira's family encouraged her to apply for the 2021 season of Great British Bake Off. Thinking there was no chance she'd get on the show and after nearly a dozen rounds of interviews and applications, Crystelle received the call that she had been chosen as one of the 12 finalists on what she affectionately refers to as "Bake Off".

3. Michael Brooks & Brad Otton, Settebello: Opening An Award-Winning Neapolitan Pizzeria With No Restaurant Experience, Just Passion For Good Pizza

In 1990, Michael Brooks and Brad Otton landed in Italy as natives of Colorado and Washington respectively, never having had authentic Italian food let alone bonified pizza napoletana. After falling in love with the life-changing culinary offerings of Italian cuisine, they found it difficult to enjoy anything remotely close to what they had in Italy back home.

After years of dreaming about their own Neapolitan pizzeria, Brad finally opened their first location in Henderson with subsequent locations in partnership with Michael in Salt Lake City, Summerlin, Pasadena, and Oxnard to follow. Their story is one of overcoming challengings not without a less-than-ideal pilot restaurant location, staffing issues, and virtually zero restaurant experience between the two of them.

As the late Jonathon Gold so perfectly said after dining at one of their California locations, "The pizza at Settebello is closer to real Naples pizza than any place that has ever existed in Los Angeles”.
