On today’s episode, I welcome Miranda Parker, Head Distiller of Compass Distillers located in Halifax, Nova Scotia, Canada. With her Bachelor in Chemical Engineering and lifelong involvement in the arts, she brings chemistry and creativity into harmony with her distilled spirits. Today, we chat about her path to becoming a head distiller and her philosophy on product development, all about Compass Distillers, and of course their gins, and so much more.

About Compass Distillers
Compass Distillers focuses on creating artisan spirits using as many locally-sourced ingredients as possible. From wild botanicals to grain, they are Halifax’s only grain-to-glass distillery.

This triple-threat of a company not only operate a distillery in the heart of Halifax’s North End, but also have an artisan cocktail bar and unique Airbnb attached to the business. They heavily support the agricultural ecosystem within Nova Scotia, where in 2022 they surpassed using 51 tonnes of Nova Scotian-grown grain to make their spirits. Compass also supports many local causes, such as the Nova Scotia Beekeepers Associate, where they’ve donated over $16,000 in just 5 years via sales of their signature spirit, Gin Royal.

Compass Distillers proudly ship their unique spirit collection across Canada via their online shop.

About Gnu Craft Spirits

When COVID-19 mandates forced us all apart, the founders of Gnu Craft Spirits, Dawn, Tony, & Darren, started dreaming up ways they could continue to safely bring people together. Naturally, the conversation turned to booze.

Never ones to take themselves too seriously, they wanted to create a product and a brand worth gathering around; something fun that provoked conversation which is how Gnu Craft Spirits was born.

The Gnu (The ‘G’ is silent) is an African plains animal known for sticking with the herd. Gnus are resilient and adaptive, and always on the lookout for their next watering hole. Kind of like Dawn, Tony, & Darren.

About the Gnu Normal London Dry Gin

The Gnu Normal London Dry Gin was designed to be a go-to gin that the whole herd can enjoy. Every small batch is made with Western Canadian juniper berries, grains from the Alberta prairies, and sun-dried orange and grapefruit peel which elevates the fresh, citrus taste, making it perfect for a dry martini, G&T, or your favourite cocktail. The Gnu Normal was recently awarded bronze by the World Gin Awards for best London Dry Gin in Canada, 2022.

Darren Scott - Chief Operations Officer and Director

Darren’s introduction to spirits started behind the bar in the 90’s slinging vodka at some of the most iconic bars and restaurants in Calgary, eventually landing in a series of senior customer service and digital marketing roles where he was able to connect two of his passions: community and design.

Darren has always been a gatherer of people and good times, using music, hockey, and booze as a catalyst for connection. When he’s not at the rink with his kids he’s dreaming and scheming up ways to get as many bottles of The Gnu Normal London Dry Gin on as many bar carts as possible across Alberta.

About Bruinwood Estate Distillery
Bruinwood Estate Distillery is one of BC’s smaller farm-gate distilleries and was established in 2018 by proprietors Jeff Barringer and Danise Lofstrom on their five acre apiary in Roberts Creek, British Columbia. The idea of creating the distillery began in the late 90's with a visit to Nichol Vineyards on the Naramata Bench near Penticton.

As television producers, we worked in the food and drinks realm. From there, we had a broad view of culinary trends and eventually, we saw that distilleries were beginning to emerge and thrive.

As our TV careers started to wane, we decided to revitalize the idea of building a distillery. We spent two and a half years rezoning the property, getting provincial and federal licences, actually building the distillery and of course, learning how to make the spirits. Our years of immersing ourselves in the best of food and flavours now comes together in our bottles of quality spirits that will delight and surprise the senses.

Nikki is the New Zealand-based co-founder of Papaiti Gin, a craft gin distillery in the making. What started out as a wild, absolutely gin-infused idea a couple of years ago, has blossomed into reality, as Nikki and her partner Adrian have set up their premises in Whanganui, New Zealand and are now selling their first bottles of gin. Combining her passion for creating delicious gin using locally sourced botanicals, with her special knack for digital marketing, she has created a visual experience through Papaiti Gin’s social media presence, taking followers along their journey of opening a craft gin distillery.

Note: The day after recording this episode, Papaiti Gin received their off-license and can now sell their products directly to customers.
