BIO: Chef Utpal Dighe’s journey to the kitchen came after a long career as a courtroom trial attorney. For many years, while working in South Florida as an attorney, his passion for cooking grew until he finally made the decision to change professions.

After closing his law practice, he enrolled at Johnson & Wales University where he earned his associates degree in Culinary Arts and a bachelor degree in Food Service Management. After working and gaining experience in both front of the house and back of the house positions in restaurants, hotels and catering companies, Chef Dighe decided to open up his own businesses. He currently is the owner / chef operator of Saborwala, an Indian-Latin fusion food virtual kitchen, and Samsara Creations, a private event and catering company.

BIO: Pastry Chef & Educator Derek Corsino has been a chef, creator, and foodie loving traveler for over twenty years. As a graduate of The Culinary Institute of America in Hyde Park, New York, Derek has achieved delectable successes most pastry chefs have yet to perfect the recipes for. As a four-time Food Network competitor, he has baked himself a place in the national spotlight. Formerly, Derek put the icing on the cake in his niche business venture as a master cake designer, elevating the meaning of specialty cakes in the Hudson Valley, New York.

BIO: Chris Struck credits his upbringing in a large, hybrid French-Deeply Southern US family in the coastal city of Destin, Florida as what incited his passion for food and beverage at an early age.

He began cooking professionally within Chef Tim Creehan’s fine dining restaurant group at the age of 14 and supplemented his formal restaurant apprenticeship with self-study trips to Europe, working in both kitchens and vineyards to gain greater knowledge of regional cuisines and wines.

After completing his undergraduate degrees in Culinary Arts & Food Service Management at Johnson & Wales University, Struck gained certifications from the Wine & Spirits Education Trust, the Society of Wine Educators, the Court of Master Sommeliers Americas, and the Deutsche Wein und Sommelierschule in Koblenz, Germany. Struck also holds an Executive MBA in Food Marketing from Saint Joseph's University in Philadelphia.

Restaurant experience has included opening 8 restaurants in both front and back of house capacities throughout his career, including being employed as the assistant sommelier at Racines NY and at Danny Meyer’s flagship Union Square Café. Currently Chris is the Beverage Director at ilili Restaurant (www.iliIn.com) in New York City and is an Adjunct Lecturer in the Hospitality Management Department of the College of Technology at the City University of New York (CUNY) teaching beverage and marketing classes.

Story #038 - Adam Roy

GUEST’S NAME:Adam Roy

CULINARY SCHOOL AFFILIATION: Joliet Junior College, Joliet, IL

BIO: Chef Adam Roy was born and raised in Chicago, IL, USA. He started his career as a dishwasher in a small 9 table restaurant in his hometown of Frankfort, Illinois. He continued working there for many years and eventually took over as chef. After working in various other food and beverage establishments, he decided to attend culinary school and enrolled in the nearby Joliet Junior College where he earned an associate degree in Culinary Arts.

After graduating from Joliet Junior College, he worked his way around the United States including being employed as a pastry cook in Chicago and a hot kitchen cook at the famous Mount Washington Resort in New Hampshire. Eventually the travel itch took over and he took a private chef’s position on a luxury yacht that sailed the Mediterranean Sea including stops in Greece, France, Italy and Spain.

His career continued in other areas of the globe when he was hand selected for a mini-ambassadorship and a 1-year exchange program in Germany, which is where Chef Roy learned the German language. Enjoying Europe, Chef Roy accepted a 1-year position in Zurich, Switzerland at the Dolder Grand Hotel. He then returned home to the United States before joining Holland America Line where he cooked on large cruise ships traveling the globe, from Russia and Northern Europe, to Hawaii and South America.

Eventually Chef Roy left the ships and moved to Singapore where he worked while attend a 3-week Asian cooking school, learning traditional Chinese Dim Sum, Chinese BBQ, Thai Cuisine as well as Chinese Vegetarian and Regional Cuisines. This led to a job working as a chef de cuisine with the Novotel group in Bangkok, Thailand and then various chefs position working for the Shangri-la Hotel Group in 5 different hotels located in Oman, Malaysia and China for close to 10 years. In total, Chef Roy has lived overseas for more than 20 years and has worked in almost every hospitality industry situation one could imagine. During this time, he also earned his bachelors and Master of Science in Hospitality Management remotely from Florida International University.

BIO: Chef Jyaira Moore’s "Culinary School Story” started in 2008 when she was getting ready to leave middle school and had to choose where she was going to go to high school. All of the high schools in her area had programs that she wasn’t interested in, which was cooking, so Jyaira decided to go to a school 2 ½ hours away by school bus to pursue her dream of becoming a personal chef at the Jacobson Culinary Arts Academy at Tarpon Springs High School.

After finishing all four years of high school at the culinary academy, Chef Moore wanted to continue her academic pursuit and immediately enrolled in the College of Culinary Arts at Johnson & Wales University’s North Miami campus. After taking her first beverage lab, Jyaira was hooked and fell in love with spirits, liquors, and bartending in general. By the spring term of her freshmen year, she had started bartending in a nightclub to pay for her schooling.

Once she had obtained her associates degree in culinary arts, Chef Moore decided to leave Miami and transfer to Johnson & Wales University’s Charlotte campus in North Carolina. It was here that she obtained her bachelor’s degree as well as continued knowledge in food and beverage. After working at the local Hilton Hotel, for a year and a half in both front and back of the house positions, Jyaira applied for a management position at a brand-new location they were building. She got the job and became an Assistant Food and Beverage director, the youngest person in the department in a management position. After 5 years with the Hilton company, she decided to call it quits with the hotel industry and went into business for herself.

Chef Jyaira is now a personal chef and caterer in the Charlotte area and has started a small infused vodka business producing her own line of herb-infused vodkas to sell to local small businesses. In addition, Jyaira is also a fashion model and the bar manager at a private social drinking lounge called "Members Only" in Charlotte.

CULINARY SCHOOL AFFILIATION: Western Culinary Institute, Portland, OR

BIO: Chef Ryan Nielsen grew up learning how to cook from both of his Grandmothers, but it was his Grandfather, a cook in the Army, whose footsteps he ended up following even though he never intended to do so. Chef Nielsen served in the Marine Corps from 1994 to 1998, and it was while he was completing the first stages of becoming a Marine in Basic Training that his culinary path was chosen, starting as a Food Service Specialist.

While studying at the Marine Corps Food Service Training Schoolhouse, Gunnery Sergeant (GySgt) Juan Delvalle, who is a pastry chef, was the first chef to inspire Ryan. However, it was Staff Sergeant (Ssgt) Maximo Fresquez who was the one that completed the process by getting Ryan to truly love the joy of cooking when he arrived at his first duty station.

Now married with two daughters, Chef Nielsen’s culinary career has come full circle as a culinary instructor at the Joint Culinary Center of Excellence at Fort Lee, VA, where he teaches new recruits the skills and knowledge of food production, while hoping to instill his passion and love of food and cooking to his students!

BIO: Born and raised in Akron, Ohio, Ashten Garrett began his professional culinary career when he was 16 years old washing dishes in a high-end fine-dining restaurant.After graduating High School, Ashten was selected to be on the opening executive board for the ACF Young Chefs Club. He served for two years as the very first ACF Young Chefs Club Eastern Regional Vice President, before accepting his current role as an ACF Young Chefs Club Ambassador.

Chef Garrett attended Johnson & Wales University in North Miami, Florida where he attained an Associate’s Degree in Culinary Arts and a Bachelor’s Degree in Hospitality & Food Service Management graduating summa cum laude. He then traveled to Italy, Spain and France cultivating his palate and culinary techniques while creating innovative and entrancing dishes. Ashten has been recognized for his multiple culinary and hospitality achievements in various organizations, including the James Beard Foundation, the National Black Chef’s Association, the American Culinary Federation (ACF) and the World Association of Chefs' Societies (WACS).

His most notable accomplishment includes winning on Food Network’sGuys Grocery Gamesin 2020. Currently residing in Cleveland, Ohio, Chef Garrett is employed at the Marriott International at Key Tower as a senor culinary arts manager where he finds great pleasure creating wonderful culinary experiences for others to enjoy.

BIO: Currently an adjunct professor for New York University’s Steinhardt Food Lab, Chef Grapes has been in the restaurant world as a pastry chef for over 30 years. She started her training at Johnson & Wales University in Providence, RI. While there, she worked for Al Forno restaurant which was the same time period when the restaurant received the James Beard award for best restaurant in the New England.

After graduations, she moved to New York City where she worked as the pastry chef at Aja, before moving on to Time Café where she oversaw the pastry program at all 3 of their restaurants.Eventually she moved on the Butter restaurant and then the Metropolitan Opera House. Wanting a more intimate dining experience, The Red Cat was the next step and then eventually to The Harrison where she worked for 8 years. Other restaurants where she worked were Oceana for a few years before taking the position of Corporate Pastry Chef for the McNally group (Augustine, Balthazar, Minetta Tavern, Morandi, Lucky Strike).

Chef Grapes also had the opportunity to work in Brooklyn where she oversaw the Dressler, DuMont and DuMont Burger. A friend who had a school program in Vietnam shared a teaching opportunity with her and after trying to get there for 5 years Chef Grapes made the leap and ended up in East Asia for 6 months where she taught everything from interview training to baking & cooking, as well as running the schools café called “9 Grains”, where the students worked. After returning to the United States, Chef Grapes took a position at a restaurant called Dirt Candy to help out a friend for a few months before taking the adjunct professor’s position at NYU.
