NAME: Luis Young

CULINARY SCHOOL AFFILIATION: Johnson & Wales University, North Miami, FL

BIO: Chef Luis Young started his career at a very young age in his hometown in Panama City, Panama. While all his school friends were playing during summer vacation, Luis was learning how to work the garde manger station at Eurasia. Soon after finishing high school, Luis got a cooking diploma from the Academia de Artes Culinarias in Panama.

In 2008 Luis enrolled at Johnson & Wales University in North Miami, Florida where he earned an Associate Degree in Culinary Arts and a Bachelor’s Degree in Food Service Management. During his time at Johnson & Wales, Luis won several competitions, including the San Pellegrino Almost Famous Chef in 2010.

Chef Young also has an interest in the front of the house and has earned several certifications in this area including one from the Society of Wine Educators, the Wine & Spirits Education Trust (WSET), and from The German Wine School in Koblenz Germany.

In 2014, Luis traveled to San Sebastián, Spain where he successfully completed his Master Degree from The University of Mondragon at The Basque Culinary Center. His work represents the perfect match between luxury and simplicity. His technique evokes the highest levels of quality and attention to detail, maintaining a clean and fresh style. His food is a constant homage to great ingredients.

Chef Luis’ professional experience has been forged in the world's finest kitchens, from his time as an intern at Martin Berasategui, Alinea, and the Celler De Can Roca, to his work as a professional at the French Laundry. A common thread is perceived through his work, which brings together a path of gastronomic excellence and a precedent of unique experiences with food and fine dining.

Story #005 - Tamara Earl

NAME: Tamara Earl

CULINARY SCHOOL AFFILIATION: Johnson & Wales University, North Miami, FL

BIO: Tamara Earl has always loved to be in the kitchen since she can remember! Around the age of 12 is when she remembers really getting serious about food when she would make food for her family, with some dishes being “out of the ordinary” while other not so much. She remembers setting a timer and would then make something out of nothing, with whatever was available. She loved the rush and expectancy of the created dishes.

Fast forward to high school, which had a culinary program available that she could take advantage of and participate in. This is also the program where she won the first ever CROP foundation scholarship that she used to attend Johnson & Wales University’s College of Culinary Arts on the North Miami campus.

However, things were not all roses when she first arrived at JWU. Tamara remembers feeling lost to say the least. She had wanted to stand out however she recalls, “there were now so many of “me”!”She quickly adapted though and found her pace, learning with all the others. However, as she neared graduation, she still was not sure of what path to take or what part of the culinary industry she wanted to pursue.

After graduating, she packed her bags and went back home to Delaware. Not knowing what was next, she fell into a deep depression. Everything she ever knew, loved and hoped for was no longer her reality. Nevertheless, she still needed to make money, so she bottled up her famous all natural strawberry lemonade and started selling it to the local shops. As the demand took off, she created a brand called Delectablez, added more products to the mix, and the rest is history. Today Delectablez consists of a full vegan and organic foods and beverage product line.

Combining her love of food, nature, and creativity, the Delectablez line of vegan food and beverage products has allowed Tamara to demonstrate how healthy food can not only be good for you, but delicious at the same time.

Story #004 - Doug Wisnioski

NAME: Doug Wisnioski

CULINARY SCHOOL AFFILIATION: Johnson & Wales University, North Miami, FL

BIO: Douglas R. Wisnioski entered the Army through the Army’s Reserve Officers Training Corps program at Eastern Kentucky University majoring in Criminal Justice.He served as an Infantry Platoon Leader and Pathfinder Platoon Leader in Wiesbaden, Germany.He then volunteered for Special Forces training and earned his Green Beret in 1985.

While in the Special Forces, he served in leadership and staff positions for 16 years including Desert Shield and Desert Storm, Germany, Haiti, and Central and South America until his retirement in 2000 as the Deputy Special Assistant for Public Affairs for the Office of the Chairman of the Joint Chiefs of Staff in the Pentagon.

Upon retiring from the Army, he served in various positions for defense contracting companies conducting vulnerability assessments for government and corporate clients.Mr. Wisnioski appeared over 30 times as an on-air Military Analyst for Fox News and conducted numerous print and radio interviews on counter-terrorism and defense related subjects.

At the age of 44, he attended the Federal Law Enforcement Training Center’s (FTETC) Police Training Program and became an Area Commander for the Federal Protective Service in Miami, Florida. Douglas R. Wisnioski has over 35 years of leadership, decision-making, management, and problem-resolution skills that he gained from his corporate, military, and law enforcement special operations and security operations experience.

In 2006, he decided to return to school and earned a degree in Culinary Arts from Johnson and Wales University graduating with honors and earning the Vollrath Culinary Excellence Award. His culinary internships were at the world-renowned Little Palm Island Resort in the Florida Keys and with Chef Andrea Curto-Randazzo at her Talula restaurant in Miami Beach.

After graduation, he worked his way through the ranks, from prep-cook, to catering chef, to private chef, to finally executive chef at ST. Thomas University in Miami. He continues to use his culinary skills today in support of numerous charity events, including “Soup for the Troops” and “Hope for the Warriors”, as well as other benefit events for fallen service member families.He continues to enjoy cooking as a Private Chef for his wife, two dogs, family members and hungry, wayward souls that happen by in the Southern Appalachian Mountains.

NAME: Jordan Fulchiero

CULINARY SCHOOL AFFILIATION: Le Cordon Bleu Institute of Culinary Arts (Pennsylvania School of Culinary Arts) in Pittsburgh, PA

BIO: Jordan Fulchiero graduated from the University Of Pittsburgh with a Bachelors Degree in Laboratory Science after having spent her entire undergrad life with medical school as the end game.However, after working at a Jewish Bakery in Squirrel Hill she was bitten by the culinary bug!

Her father, an amazing physician, one day asked her what she loved to do?She told him that she loved to cook and that her dream was to be a chef! Her dad said, "OK, go try culinary school, see where it takes you and how you feel after the first semester, then make your decision."

A week later she enrolled at Le Cordon Bleu Institute of Culinary Arts in Pittsburgh (Pennsylvania School of Culinary Arts). She sailed through Culinary School and immediately entered the workforce. After working in a variety of restaurants on the West Coast, she began to miss her family and friends and returned to take a job in North Carolina where she eventually met her husband. Together they ended up running a small Italian Restaurant in Chapel Hill for several years.

However, after starting a family, Jordan took a couple of positions that provided a better work / life balance, including the Director of Food and Beverage for a large hospital group where she worked for almost 10 years. During her time there, she also began working in the evenings as a Culinary Instructor at The Art Institute of Raleigh-Durham.

Currently, Jordan works at Durham Technical Community College, which she just loves! “I can't describe the amount of satisfaction I get, each and every day, to be able to give the students, staff, and public fresh locally sourced food at a price that is affordable. To be able to give back to the community that has served myself, my husband, and my three kids is priceless. There is no greater satisfaction than being happy about going to work each day, happy about seeing your teammates, and happy to be giving back to Durham, a place that has given me so much every single day”.

NAME: John Noble Masi

CULINARY SCHOOL AFFILIATION: Culinary Institute of America, Hyde Park, NY

BIO: John Noble Masi started his career in food service when he was just knee high to his Dad making fresh baked rolls, cookies, and danish in his father’s bakery. John loved food so much, he later attended The Culinary Institute of America before he moved to Florida to earn his Bachelor’s degree in Hospitality Management and Master’s degree in Business Administration at Florida International University.

Since graduating, John has dedicated more than 28 years to a career in culinary arts and hospitality, working in both front of house and kitchen/bakery operations for hotels, cruise ships, premiere catering companies, and 2 of the top 3 global food service management companies in positions that continually increased his responsibility from an Executive Chef to a Regional Vice President role.

Today, John teaches young hospitality professionals as a faculty member at the Chaplin School of Hospitality Management & Tourism at Florida International University. In addition, he recently assumed responsibilities as the President for the American Culinary Federation’s Broward County Chapter and leads all activities in their local ACF events and meetings, as well as coordinating all educational sessions and member support programs for that local chapter.

In 2011, John formed Hospitality Performance Partners, bringing this same hospitality passion to a new consulting company focusing on a broad range of activities. The company’s culinary trainings and operational performance “Fresh Eyes” reviews have helped many clients improve their hospitality operations both financially and operationally.

BIO: Will Glass, co-owner and co-founder of HotSugarPop LLC, was born and raised in Pittsburgh, PA. He developed a passion for Culinary Arts in high school and then went on to attend Johnson & Wales University in North Miami, where he earned a bachelor’s degree in Culinary Arts. While at Johnson & Wales University, Will immersed himself in a wide variety of school activities, including becoming a member of the Leadership Team, the Special Functions Team and the Collegiate Ambassador Team.

After graduation, Will enlisted in the United States Army Reserve as a Food Service Specialist and was later commissioned as a Food Service Warrant Officer. In 2016, Will graduated from Pennsylvania State University with a Masters in Homeland Security, Agricultural Biosecurity and Food Defense and currently serves as the Food Advisor for the 518 Sustainment Brigade in Knightdale, NC.

Will is married to the former Tiffany Templeton and they have three children. Their oldest son Tye has several food allergies and was the influence that resulted in Will and Tiffany creating HotSugarPop. Today, their HotSugarPop branded products can be found in their store, online and many other retail establishments around Fayetteville.
