CULINARY SCHOOL AFFILIATION: Culinary Institute of America, Hyde Park, New York

BIO: Chef Samuel Glass CEC, CCE, AA, is a Chef/Professor teaching at Centennial College’s School of Hospitality, Tourism and Culinary Arts. Chef Glass was the lead faculty member for the development and implementation of the school’s two-year Culinary Management program and the one-year Culinary Skills – Chef Training program.A member of the American Culinary Federation (ACF) and the Canadian Culinary Federation (CF), Glass was the 2005-2006 Chef of the Year for the Central Region of the CF and received an ACF President’s Medallion in 2006 for his contributions to the culinary profession. In 2008, he was inducted into the ACF’s honor society, the American Academy of Chefs. He is also a recipient of the Service Award from the American Academy of Chefs in 2015, recognizing his numerous volunteer activities at both home and abroad.

Chef Glass is a proud Canadian graduate of the Culinary Institute of America (1982). Upon graduating, Chef Glass worked at the Windsor Arms hotel in Toronto. From there, he travelled to Israel, where he worked at the Jerusalem Hilton. After a working as a “stagiaire de cuisine” for six months in France, he returned to Canada, working at the Millcroft Inn. His next position was at the Park Plaza hotel, where he was responsible for the opening of the hotel’s kosher facility. Chef Glass then worked as Executive Chef for Caterers York, one of Toronto’s largest kosher caterers. His next position was that of Executive Chef at Oakdale Golf and Country Club in Toronto. Chef Glass then made the move to teaching, becoming a culinary educator over eighteen years ago.

Chef Glass takes a proactive role in culinary education, having completed his M.Ed at Brock University. He has published academic articles on culinary curriculum and has also volunteered as a mentor through the Adopt-A-Ship program of the ACF with the U.S. Navy. Over his career, Chef Glass has worked and taught on three continents and four countries, contributed to cookbooks, competed both locally and internationally, participated in community culinary events, and is recognized as an expert panelist on many industry topics. Chef Glass is also a certified TrainCan Sanitation instructor. He is a Certified Executive Chef, Certified Culinary Educator, Approved Certification Evaluator and is also a member of the Certification Commission of the American Culinary Federation. Most recently Chef Glass became an approved level B judge under the auspices of the World Association of Chef Societies (WACS).

Story #014 - Joseph Keefer

GUEST’S NAME: Joseph Keefer

CULINARY SCHOOL AFFILIATION: Johnson & Wales University, North Miami, FL

BIO:Chef Joseph Keefer was born in the small town of Spring Hill Florida, which is where he discovered his love for cooking in a home economics class. He went to Nature Coast Technical High School and studied Culinary Arts under Chef Peter Diulio. The next decision was an obvious and that was to further his culinary education at the post-secondary level.

Chef Keefer enrolled in the College of Culinary Arts at Johnson & Wales University’s Miami campus where he spent four years trying new foods, competing in cooking challenges that gave him a creative outlet to hone skills and technique, interning in Germany where he was introduced to foraging and preservation, and minoring in Baking and Pastry and Beverage Arts.

After his culinary school education at JWU, Chef Keefer packed up his belongings with his friends and moved to Seattle, Washington. He found work at a restaurant run by Chef William Belickis called Mistral Kitchen that was fresh, innovative and relatable, which offered tasting menus, a la carte, crudos, purees! It was not long before a new job opportunity opened up at Canlis, considered by many to be the best restaurant in Seattle. The job was for a chocolatier, which allowed Chef Keefer to refine his love of working with chocolate. While at Canlis, he worked his way around the kitchen learning about private dining, tasting menus, and Japanese and American fine dining, laying the foundation and groundwork for the type of cook Chef Keefer would become.

After Seattle, Joseph travelled to New York City to work for Chef Damon Wise, who was at one time Tom Colicchio’s corporate executive chef. The restaurant was a French Bistro, which is where he learned about the classical bistro dishes that highlighted a balance between French and American cooking. However, Chef Keefer left the property when the opportunity to be on the opening staff of L’atelier de Joel Robuchon arose. The restaurant was awarded 2 Michelin Stars the next year. Under Robuchon, Mr. Keefer learned about French techniques and the quality of one’s ingredients. While in New York City, Chef Keefer made it a point to eat his way around Brooklyn, Chinatown, Korea Town, Little Italy and Long Island.

After a quick year back in Florida to apprentice as meat cutter, Chef Keefer moved to Christiansburg, Virginia, which is where Virginia Tech is located, and currently works at a local restaurant that focuses on Appalachian Cuisine and Culture. When he is not working, Joseph can be found baking sourdough, fermenting vegetables, or tending to his garden. Future plans include hosting pop-up dinners using the local food products of the area, finishing the book he always wanted to write, and to begin a social media channel for food lovers.

GUEST’S NAME: Stacey Welch-Andrade

CULINARY SCHOOL AFFILIATION: Johnson & Wales University, North Miami, FL

BIO:Chef Stacey’s passion for cooking started at home when she first purchased an Easy Bake Oven with her own money at the age of 7 and made various "creations" for her Mom and Dad. This love of cooking was solidified at age 11 when Stacey first watched the Lifeftime Television show "The Main Ingredient" with Chef Bobby Flay.

During high school, Stacey had various food service industry jobs, including one at a local smoothy shop were she was the supervisor of actress Megan Fox.

After graduating from the culinary program at her high school in Stuart Florida in 2004, Stacey enrolled in the College of Culinary Arts at Johnson & Wales University's North Miami campus where she received her Associates and Bachelors Degrees.

Chef Stacey met he husband Victor while on her JWU internship in Germany. They are both chefs and have been married for ten years and have two daughters Isabelle and Gabriella. In 2015 they relocated to Massachusetts where Victor had accepted an employment opportunity at a private country club in South Hamilton as the Executive Chef.

Stacey has her own cookie business Sprinkles by Stacey (https://www.sprinklesbystacey.com) and writes a chef-inspired food and lifestyle blog under the same name, where she shares recipes from her experience in the culinary industry, travels, and memories from her childhood.Through this outlet, she writes about her life with homeschooling, motherhood, and faith.Stacey volunteers for MOPS International as a Community Coach where she supports MOPS groups throughout New England (https://www.mops.org).

Story #012 - Christopher Terry

GUEST’S NAME: Christopher Terry

CULINARY SCHOOL AFFILIATION: Johnson & Wales University, North Miami, FL

BIO:Chef Terry’s passion for cooking started at home with interest coming from his mother and grandmother’s cooking. A former student of St. Joseph’s Academy and Princess Margaret School, Christopher went on to receive his Associates Degree in culinary arts from the Antigua & Barbuda Hospitality Training Institute. During his studies at the institute,he worked as a commis cook at the Trade Winds Hotel, which is where he was first introduced to a professional kitchen.

In 2009, he was given the opportunity to be a part of the opening team at the Sugar Ridge Hotel, where he was quickly promoted to Chef de Partie. In 2010, Chef Terry was awarded Young Chef of the Year by the Antigua Hotel’s and Tourist Association. It was during that same year that he was selected to be a part of Team Antigua for Taste of the Caribbean, where his team won both silver and bronze medals.

His career was quickly taking off as he competed in numerous local competitions, such as the Mango Festival, the Seafood Fiesta, the Wadadli Music Festival Cook Off and the Smoking Hot BBQ Challenge. At the same time, Chef Terry had many of his recipes featured in several local magazines, such as Food & Drink Magazine, Liat Zing Magazine and Antigua Summer Guide.

In 2012, while working at both the Jumby Bay Resort and as a private chef, Christopher started the youngest award winning BBQ team of the Caribbean called the Smoking Grillers. His team travelled far and wide competing and winning medals in BBQ competitions, including events in Antigua, Puerto Rico and Tennessee. In 2014, Chef Terry took his love of BBQ to another level when he completed a certification in professional BBQ from the Texas Beef Council.

After a stage at Le Talbooth in England to further his international knowledge and experience, Christopher enrolled at Johnson and Wales University in North Miami, Florida to pursue a Bachelor’s Degree in Culinary Arts and Foodservice Management.

While at the university, Christopher continued participating and winning in many culinary competitions. He also pursued outside certifications, such as the Wine Spirits Education Trust’s (WSET) Level 2 Certification, as well as continuing to gain experience in local restaurants and resorts. A few of these opportunities were a Junior Sous Chef’s position at the Ocean Reef Club, a Private Chef for an American NFL Football Player, and a paid apprenticeship with a well-known Florida ice carver.

After his graduation from JWU in May of 2014, Chef Terry traveled and worked in many well-known establishments and represented Antigua & Barbuda at Caribbean Week NYC in the years 2015, 2016 & 2018. From 2017 to 2019, he held the position of Sous Chef at Sandals Royal Barbados 2017-2019. In April 2019, he received the Artisan Award at the Antigua & Barbuda National Youth Awards. Most recent, Chef Terry obtained his certification as a Chef De Cuisine form the American Culinary Federation (ACF). Currently, Christopher is the Executive Sous Chef at Hammock Cove Resort in Antigua

NAME: Nikki Pettineo

CULINARY SCHOOL AFFILIATION: Johnson & Wales University, North Miami, FL

BIO: Chef Nikki Pettineo started her culinary training in 2005 at Johnson and Wales University in Miami, Florida. She quickly began her career as a private chef for some of the most talented athletes in the NFL by executing heathy, power-packed meals for players from the Miami Dolphins, Tampa Bay Buccaneers and New York Giants. She has opened an acclaimed South Florida restaurant, cooked all over the world on a Super Yacht, and taught culinary education courses to students at Keiser University.

Chef Nikki happily calls Tallahassee home. She writes, produces and directs an educational YouTube Channel called “Nikki Talks Food” and appears at Brown’s Kitchen Center as a guest chef teaching culinary classes for adults interested in learning true culinary techniques.

BIO: Chef Keshawn Adams was born in Cleveland, Ohio. He developed a passion for Culinary Arts when he was very young and often helped his grandmother in the kitchen. After high school, he went on to attend Johnson & Wales University in North Miami, where he earned a bachelor’s degree in Culinary Arts. While at Johnson & Wales University, Keshawn immersed himself in a wide variety of school activities and volunteered in numerous ways. After graduation, he plans to relocate to Arizona to pursue a career in the healthcare food service industry.

Keshawn has often been described as a free spirited person who is always there to provide a smile for others when needed. He is passionate about food and life, and lives for hospitality and making others feel welcome.

BIO: Gregory Gorgone, CDM, CFPP, FMP is a graduate and former Chef Instructor of Johnson & Wales University with over 34 years of experience in food service and hospitality management. With a successful track record in the restaurant and hospitality industry, Greg has brought his unique insights and leadership style to the healthcare industry to deliver a more patient centered, culinary driven experience while still keeping careful focus on financial objectives and Resident/Patient Satisfaction Scores.

During the initial stages of his career, Greg quickly transitioned from Executive Chef to restaurant and hotel general management to hospitality and restaurant development. Energized by the recent changes in healthcare foodservice, Greg has been helping transform the healthcare world to a more hospitality based foodservice model. Greg has developed and implemented operational policy and procedures for all types and sizes of operations. In addition to his operational experience, Greg has managed concept development projects, kitchen design plans and grand openings for hotels, restaurants, QSRs and healthcare operations.

BIO: Chef Halie Wallace graduated from Johnson & Wales University’s College of Culinary Arts at the North Miami campus in 2015 with a degree in Baking & Pastry Arts.

After her internship at the Four Seasons Hotel in Palm Beach, Florida, she went straight into a pastry cook position at the world famous Breakers Resort in Palm Beach, Florida. After a year of experience with the Breakers Resort, Halie accepted a position at the Eau Resort in Palm Beach where she spent over 2 years perfecting her skills.

After a summer position as a pastry chef at a private club in Michigan, Halie returned to South Florida in 2018 to take the position of pastry chef at the Boca Raton Tanzy Restaurant where she is currently.

NAME: Jacob Anguiano

BIO: Chef Jacob Anguiano was born in Boynton Beach, Florida and has lived in and around Palm Beach County most of his life. He studied at Johnson and Wales University's North Miami campus in the College of Culinary Arts where he received his Bachelor's degree in culinary arts and food service management.

Chef Anguiano has worked in a variety of industry segments including different establishments and venues such as private catering, hotels, fine dining, fast casual, as well as resorts such as Walt Disney World in Orlando Florida. His passion for culinary arts started at a young age when he would cook for his family at home. His love for food grew from there and a life long belief that good food can always bring people together!

What he enjoys the most about cooking is the freedom it gives to create while discovering new flavors and techniques. His passion for cooking is what drives him to constantly improve both himself and his skills. He describes his current cooking style as simplistic but elegant, and draws inspiration from many sources, ingredients, and cultures. It is his philosophy to keep his dishes to a minimal amount of components in order to bring out and showcase the beauty of the ingredients in the dish. His hope is that his food brings enjoyment to his guests while transporting them back to a time in their memories where all things are good.

Story #006 - Luis Young

NAME: Luis Young

CULINARY SCHOOL AFFILIATION: Johnson & Wales University, North Miami, FL

BIO: Chef Luis Young started his career at a very young age in his hometown in Panama City, Panama. While all his school friends were playing during summer vacation, Luis was learning how to work the garde manger station at Eurasia. Soon after finishing high school, Luis got a cooking diploma from the Academia de Artes Culinarias in Panama.

In 2008 Luis enrolled at Johnson & Wales University in North Miami, Florida where he earned an Associate Degree in Culinary Arts and a Bachelor’s Degree in Food Service Management. During his time at Johnson & Wales, Luis won several competitions, including the San Pellegrino Almost Famous Chef in 2010.

Chef Young also has an interest in the front of the house and has earned several certifications in this area including one from the Society of Wine Educators, the Wine & Spirits Education Trust (WSET), and from The German Wine School in Koblenz Germany.

In 2014, Luis traveled to San Sebastián, Spain where he successfully completed his Master Degree from The University of Mondragon at The Basque Culinary Center. His work represents the perfect match between luxury and simplicity. His technique evokes the highest levels of quality and attention to detail, maintaining a clean and fresh style. His food is a constant homage to great ingredients.

Chef Luis’ professional experience has been forged in the world's finest kitchens, from his time as an intern at Martin Berasategui, Alinea, and the Celler De Can Roca, to his work as a professional at the French Laundry. A common thread is perceived through his work, which brings together a path of gastronomic excellence and a precedent of unique experiences with food and fine dining.
