Story #025 - Joyce Esther Calayag

GUEST’S NAME: Joyce Calayag

CULINARY SCHOOL AFFILIATION: Center for Culinary Arts, Manila, Philippines

BIO: Joyce Esther Calayag was 16 when she began her formal culinary training at the Center for Culinary Arts in Manila. She remembers that at the time this decision was not supported by her Filipino parents who were very traditional when it came to education. To them, culinary training was considered a vocational hobby and frowned upon. Coming from a family of doctors and engineers, Joyce was expected to go to college, complete a 4 year degree and then follow in the same path as they did.

Of course, this put a tremendous amount of stress on Chef Calayag. Even before she began her studies, she had constant hesitation and self-doubt. On top of this, she couldn’t really afford the culinary school tuition because in the Philippines they don’t have student loan programs. Instead, students are dependent on their parents to pay for college or university. Luckily, her siblings pitched in and they were able to cover Joyce’s first year tuition. However, Chef Calayag was going to have pay after that so she immediately started applying for various scholarships so that she could continue pursuing her degree. Through her due diligence and perseverance, Chef Calayag was awarded a full academic scholarship for the remained of her studies.

Enrolling initially to study culinary arts, Chef Calayag ended up switching to baking and pastry after the first year. French macaron and L’Opera gateaux are the two recipes that still inspire her to this day! Today Chef Calayag is a chef instructor who teaches students that are just like herself, who are pursuing their culinary dreams. And now many of her former chef instructors are her colleagues and supervisors. As an culinary educator for over three years, Chef Calayag still believes that cooking and baking are magical, with food being the common bond that connects and brings us together!

Being a young professor, Chef Calayag recently made the decision to pursue a Master’s Degree in Adult & Vocational Education so that she can share even more knowledge with her students and be an effective mentor. Though she still believes the road to becoming a chef is not a glamorous route, but one that is physically demanding, mentally strenuous, and emotionally exhausting, she has no regrets and wouldn’t change a thing. Like all investments, it requires growth which takes time. There is a sacred concept that Chef Calayag and the other faculty at her school share and that is, “Students are like kernels of corn, and when given heat or pressure, the kernels will pop. We know that every popcorn kernel doesn’t pop at the same time, but eventually they will!”

BIO: Rebeca Stevenson has always loved food and the ability it has to create memories and help restore our bodies. She is dedicated to providing freedom from a restrictive mentality surrounding food. Chef Stevenson believes you can eat all the delicious food you like (yes, including pizza!) and still reach your wellness goals.

As a Registered Dietitian and Licensed Nutritionist, Chef Stevenson empowers clients to make lifestyle changes. She provides coaching through nutrition, healthy cooking to help her clients meet their goals. She blends evidence-based recommendations, food culture, and lifestyle factors into her counseling.

CULINARY SCHOOL AFFILIATION: Bishop State Community College, Mobile, Alabama

BIO: Samuel Spencer grew up in Mobile, AL and has been passionate about cooking his entire life. He started his career as a fry cook at Kentucky Fried Chicken before moving on to a Catering Coordinator and Assistant to the Sous Chef position in the dietary department at Springhill Medical Center.

Chef Spencer attended Bishop State Community College in Mobile, Alabama where he studied Culinary Arts. While pursuing his education, he served as the Class President and was named Outstanding Culinary Student of the Year. He was first in his class when he graduated in 2012. While in school, Chef Spencer was employed in the industry full-time and continued to hone his skills. After working as banquet chef and executive chef in the local area, he decided to move into education and accepted a teaching position as a Commercial Foods Instructor at Coastal Alabama Community College in Atmore, Alabama. Chef Spencer’s current position is the Food Service Director / Culinary Arts Instructor at Guided Discoveries / CampChop.

A long-time member of the American Culinary Federation, he has earned his certified chef credentials, his Servsafe Food Protection Manager Certification, and is a Certified Proctor Instructor by the National Restaurant Association Educational Foundation. He is also an active member of the Metro Mobile Chefs & Cooks Association and is President of the ACF Gulf Coast Culinary Association, Pensacola Chapter. In the recent past, he was inducted into the Les Amis d’ Escoffier Society of Chicago, recognized as a 50 Executive Chefs and 50 industry leaders candidate, and was a recipient of the America Culinary Federation’s Presidential Medallion which exemplifies culinary excellence and leadership expertise. However, Chef Spencer is most proud of his partnership with the Chefs Move to Schools Association.

BIO: Amber Plecha is a private chef and culinary nutrition educator in Savannah, Georgia. She holds a Culinary Arts degree from Johnson & Wales University in North Miami, Florida, an Education degree from NYU, and a Law degree from the CUNY School of Law and is licensed to practice in the state of New York.

CULINARY SCHOOL AFFILIATION: Symbiosis School of Culinary Arts, Pune, India

BIO: Rizwan Yargatti is a Chef with over a decade of experience in food production who has worked in many different areas of the food service industry. Currently a Chef Instructor at the Symbiosis School of Culinary Arts in Pune, India, where he is responsible for daily lesson plans, demonstrations and theory work in the culinary fundamentals.

Armed with a bachelor’s degree in Hotel Management and Catering Technology and an MBA in International Hospitality & Business Culture, Chef Yargatti is well suited to be teaching young minds and the next generation of chefs.

Before joining the faculty of Symbiosis School of Culinary Arts, Chef Yargatti’s culinary career took him across India, Europe and the Middle East while he honed his skills and increased his food knowledge in Italian delis, fine dining kitchens, and luxury hotels.

Prior to working in Mumbai and Nashik with Accor Hotels, Chef Yargatti worked in many other high end hotel brands including Hilton Worldwide, Best Western International, Premier Inn, Millennium Hotels & Resorts, and ITC Luxury Hotels.

Chef Yargatti has participated in numerous food festivals and has received many awards. He loves traveling and spending quality time with his family, as well as sports and music. He is currently pursuing a terminal degree to further his education and believes one should always learn, learn, refine and evolve.

CULINARY SCHOOL AFFILIATION: Johnson & Wales University, Providence, RI

BIO: Linda Kender is a Chef and a Food Safety Content Expert who has worked in the industry and at Johnson & Wales University’s College of Culinary Arts for 45 years. She is a member of the second graduating class of JWU – CCA. She also holds a Master’s Degree in Teaching and is a Certified Professional – Food Safety, (CP-FS).

Chef Kender spent fifteen years teaching Garde Manger, her passion, at the College of Culinary Arts, and 16 years teaching Menu Planning & Cost Control, as well as Food Safety. She also worked at many seasonal resorts throughout New England honing her skills and staying up to date with industry trends while employed with the university.

BIO: Chef Keisha Prosser, aka “The Mobile Cooking Teacher”,has loved food and cooking her entire life. She is also the brilliant woman behind “Ree's& Kei's Mobile Cooking Teacher”. BIO: Australian born and trained, Chef John McFadden commenced his career in the kitchen at the age of 12, starting as a humble kitchen hand. He has over 37 years in the food industry and is well recognized for his attention to detail and leading multiple teams and operations.

John commenced his apprenticeship aged 15, at the Lantern Palace, Wamberal before completing at La Mer Fine Dining at Peppers on Sea at the age of 19. John moved quickly through the ranks with postings at notable restaurants, including the two-hatted Grand Fine Dining Rooms at The Windsor Hotel, Hayman Island & Xu Bistro at The Hyatt Regency where he won best Hotel Dining Restaurant in Australia.

Along with Carol Selva Raja, he was one of the first and youngest Australian chef to be invited to cook at The James Beard Foundation in New York for 80 New York food critics. John’s last 16 years have been at a Group Executive Chef level overseeing multiple operations and teams nationwide delivering varied food concepts and training programs. John McFadden is one of the great all-rounders of the hospitality industry, from Fine Dining, Hotels, QSRs, Catering Companies and bust Club spaces, to helping providers, and consulting to suppliers and industry. McFadden is a highly-motivated chef whose attention to detail is well known industry-wide.

He is a great communicator, mentor, and motivator who loves to share his broad experience with keen apprentices and rising chefs who aim to have the same exacting standards that John holds in high regard. John is also the National Chairman of Judges of Chef of The Year at Food Service Australia and has assisted in the judging process for the Bocuse D`or to select The Australian Culinary Team. He was recently invited by the founding Board of Women in Hospitality to be a culinary mentor for their program. Today John is providing his hospitality consulting service back to industry and welcomes the opportunity to share his knowledge and experience.

BIO: Chef Maureen Choate has been in the culinary field for over 40 years, having worked in restaurants, hotels, cooperate dining, assisted living, nursing home, personal & private chef, and has been a culinary instructor for 15 years.

Chef Choate graduated from the Culinary Institute of America in Hyde Park New York in 1983 with an Associate’s degree in Culinary Arts and went back to school in 2013 to pursue a Bachelors degree in Culinary Arts from the New England Culinary Institute, which she received in 2014.

A member of the American Culinary Federation since 1988, Chef Choate is also a Certified Chef de Cuisine (CCC) as well as a Certified Proctor and Instructor for Servsafe since obtaining her ServSafe Manager’s Certificate in 2007. Her most recent credential is that of Foodservice Management Professional (FMP) from the National Restaurant Association which she earned in 2016.

Chef Choate is currently a chef instructor at Lincoln Technical School where she has taught since January 2007.
